‘Tori’ is the word for bird in Japanese. We cook food made with feeling to share our love of Japanese food with people visiting our nest.

We believe that changing how and what we cook and eat is one way to reduce our environmental footprint and improve our health. We focus on cooking from scratch by using ethical and local fresh produce and buying ingredients in bulk to reduce packaging waste whenever possible. We make our own Japanese fermented ingredients and use them for cooking, which improves your digestion and immune system.

Chickpea White Miso is light-coloured miso made with a higher ratio of rice koji and a reduced salt content. Because it has a sweet and mild flavour it is suitable for making dips, pickled vegetables, and even sweets.

Most of our food is made from scratch without any additives or artificial flavours. We often use miso and salt koji in our cooking. These are used to add saltiness and an umami taste (a pleasant savoury taste) to dishes. Amazake is used as a sweetener for making sweets to reduce the sugar content.
